|To prepare thepasta: In a medium stock pot boil 5 quarts of water. Stir the macaroniinto the boiling water along with 1 teaspoon of salt. Let simmer for 8-10minutes until just cooked through. Remove from heat and strain.
To prepare theZucchini: Preheat the oven to 350 degrees. In a medium sized bowl mixthe cooked macaroni with the zucchini, 2 tablespoons of paramesan, mozzerella, eggbeaters and milk.Season with remaining salt. Pour the pasta mixture into a non stcik oven proofpan. Sprinkle with the remaining parmesan. Bake for 15 minutes until heatedthrough and the cheese has browned on top.
