  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Minced fresh ginger
  • 1 small scotch bonnet, seeded and minced
  • 2 Tablespoons Garam Masala
  • 2 teaspoons Kosher salt
  • 4 large Ripe mangos,diced
  • 1 large Lime, juice freshly squeezed
  • 1/2 cup Golden Raisins
To Prepare the Chutney:
In a large saucepan, combine the sugar and vinegar. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Add the onions, garlic, ginger, chile, garam masala and salt. Return to a boil, then decrease the heat and simmer, uncovered, for 5 minutes. Add the mangos, lime juice, and raisins.
