Easy Cooking With Chef Allen's Products Back to Recipes
Mango Chicken Salad

Ingredients to Serve-4
  • Ingredients to Serve-4
  • 1/2 pound cooked Chicken diced in large chunks
  • 1/2 cup Celery, Diced
  • 1/2 cup Yellow Peppers, diced
  • 1/2 cup Red Onion, diced
  • 1/4 cup Raisins
  • 2 tablespoons Parsley, chopped
  • 1/2 cup Mango Ketchup
  • 1 head Lettuce, shredded
  • 2 tablespoons Sunflower Seeds, toasted
To Prepare the Salad: In a large mixing bowl, combine the chicken, celery, pepper, onion, raisins, parsley, and ketchup. Toss together to incorporate well. Cover and refrigerate for ½ hour.

To Serve: Divide the lettuce on individual plates. Spoon the mango chicken salad into the plates and top with toasted sunflower seeds.
