Peaches Poached in Pinot Noir
Ingredients to Serve-4
  • 4 large Ripe peaches
  • 1 cup Sugar
  • 1 cup Water
  • 2 cups Pinot Noir
  • 1 piece Star anise
  • 1 piece Cinnamon
  • 1/2 piece Vanilla bean, spilt
To Prepare the Peaches: Using a sharp knife, peel the skin off the peach. Cut in half removing the pit and set the peach aside. In a small sauce pot combine the sugar and water and bring to a boil. Boil the sugar and water for 5 minutes to make a simple syrup. Add the pinot noir, vanilla, star anise and cinnamon. Bring the mixture to a boil and reduce the heat to a medium simmer. Add the peach halves, and poach for 10 minutes. Carefully spoon out the peaches with enough liquid to cover the fruit, let it cool completely. The remainder of the pinot noir liquid should be rapidly simmered for 10 minutes to reduce and concentrate the flavors. Strain the pinot noir syrup and serve with the poached peaches.
