    Bring out the kids for a cooking class! Six interactive cooking demonstrations for children ranging in age from 6-16 will take place under a 140í x 50í tent, led by Food Network personalities Emeril Lagasse, Rachel Ray, Dylan Lauren, Bobby Flay, Giada Di Laurentiis, and George Duran. Other activities occurring before and after the seminars include games, demonstrations, sponsor give-a-ways, and book signings. Share Our Strength will present a nutrition information booth, with children receiving a cookie for answering questions and taking a pledge to incorporate proper nutrition and exercise into their daily routine.

    Super Bowl XLIís The Worldís Table to Teach Teens Healthy Cooking

    The NFL invited a group of South Florida teens to learn cooking tips and techniques from some well known area chefs at the Super Bowl XLI Worldís Table held at Johnson & Wales University in January. Miami star chefs Allen Susser of Chef Allenís, Michelle Bernstein of Michyís, and Michael Bloise of Wish, were joined by Johnson & Wales chef Colin Roche in leading four cooking classes celebrating South Floridaís diversity while stressing the importance of making healthy food choices.ÝThroughout the month NFL players joined the cooking sessions to help encourage the teens to try new, ethnically diverse foods and sample the great dishes being prepared each week.The classes followed the Share Our Strengthís Operation Frontlineís ìPower of Eating Rightî curriculum, which teaches nutrition, and food safety to kids.Ý

    Cocktail of the Month
    Passion Fruit & Mango Caipirinha

    Caipirinha is Brazilís national cocktail. Cachaca is cane sugar liquor. Brazilians consume Caipirinhas in almost all social events and is a favorite for beach parties and barbecues among family and friends.
    1 tablespoon Mango Puree
    1 tablespoon Passion Fruit Puree
    2 ounces Lime Juice
    2 ounces Cachaca
    3 teaspoons Brown Sugar

    To Prepare the Drink:
    Combine the ingredients in a shaker. Let the mixture sit for a few minutes. Add ice to the glass. Pour ingredients in shaker over and ice and serve.

    Recipe of the Month
    Mamey Glazed and Spiced Chicken

    1 Cup Mamey
    ¼ Cup Dry white wine
    ¼ Cup Water
    1 Tablespoon Pernod
    ¼ Teaspoon Ground cinnamon
      Pinch Ground cloves
      Pinch Freshly ground nutmeg
    4 6oz Chicken breasts
    2 Tablespoons Extra virgin olive oil
    2 Cloves Garlic, minced
    1 Teaspoon Kosher salt
    ½ Teaspoon Freshly ground pepper
    4 Sprigs Fresh mint

    To Prepare the glaze:
    In a small bowl of a food processor, pulse together the mamey, wine, water and Pernod. Add in the dry spices and set aside.

    To prepare the chicken:
    Season the chicken with salt and pepper. In a large skillet heat the olive oil over medium high heat. Add the chicken breasts and cook until browned on the bottom, about 3 minutes. Turn the chicken and scatter the garlic in the pan. Pour the mamey mixture into the pan, cover and simmer over medium heat until the chicken is cooked through.

    To serve:
    Transfer chicken to plates and spoon the sauce over the top. Garnish with fresh mint.
