Dinner for Mangos
Dinner for mangos exchange program to anyone bringing 200 pounds of mangos to us here at Chef Allen’s. That having been said, I would like to invite you and a guest to Chef Allen’s in exchange for your mangos and would like to offer two possibilities for this exchange. The first is a reservation on any evening from Sunday to Thursday between July 1, 2004 and November 15, 2004. We would prepare a “Tasting Menu” for two, including wines, which would offer a variety of the tastes and flavors of Chef Allen’s. The second possibility is to use the exchange for one of our “2004 Passport Series” dinners; this year we have created a very special series of dinners using the artwork of several renowned artists, both local and international, titled “Palate to Palette”. Whichever you select, the “Tasting Menu” or the “Passport Dinner” we look forward to having you as our guests.

Beginning July 1, 2004 Chef Allen's will offer a four course "Tasting Menu" priced at $50 per person (tax & gratuity not included).

Last months Palate to Palette featuring Rick Garcia’s artwork was a great success. Over 50 guests attended and two paintings were sold. His artwork is still draping our walls until the 12th of July so if your interested in his work please come in, we would be glad to assist you with any questions.

Friday, July 9, 2004 - Food for Thought

The 1st and 2nd are about being open-minded and listening to opinions with which you don't agree -- but not arguing. Everyone's entitled to an opinion, right? Recipe of the Month

  Mango Rum
At Chef Allen’s, July is Mango Madness month. We start by macerating hundreds of pounds of mangos in gallons of rum, so we can put them up for the winter. We never want to let go of those bright, summer flavors. Use ripe Florida mangos that have the sweet aroma of the tropics.

´ 3 large ripe Florida mangos
´ 1 bottle of white rum

To prepare the Mango Rum: Peel ripe mangos, cut the flesh from the pit, and cut into large dice. Put the mangos in a clean 2-quart mason jar. Add 1 bottle of white rum and seal the jar. Let sit in a cool, dark place for 2 to 3 days before using. Laddle out the mango rum as needed. Makes 3 ½ cups.

  Mango Mojito

´ 1/2 large ripe Florida mangos
´ 4 ounces Mango Rum
´ 6 whole mint leaves
´ 4 cubes raw sugar
´ 4 tablespoons freshly squeezed lime juice
´ 2 think slices lime
´ 10 large ice cubes
´ 3 ounces Mountain Dew

To prepare the Mojito: Cut the mango into 4 large wedges. Keep 2 of the wedges for garnish. Remove the flesh from the remaining mango and divide between two tall glasses. Add the mint leaves, sugar, lime juice and lime slice equally to each. Muddle the mixture in each glass. Add the ice and mango rum to eah glass. Top with a spash of Mountain Dew.

Garnish each drink with a mango wedge.
