New Exciting Events to Look Out for this Month

Monday, April 5, 2004 - Passover
Chef Allen will hosting one seating only dedicated exclusively to the Passover Seder presented “Kosher Style.” The menu will follow the Jewish story of Passover and each family may celebrate their Seder at their own pace. The five-course menu includes a traditional Seder plate with Venetian, Caribbean and Yemenite Harosets, Red Snapper Gefilte Fish (instead of the traditional fresh water pike and carp) with Bitter Herbs Salad, Red Sea Salt and Borscht Foam.

The Seder continues for the second night of Passover on Tuesday, April 6 with both the a la carte menu and the Passover menu being offered.

$75 per person; $35 per child plus tax and gratuity.

Friday, April 9, 2004 - Food for Thought
Food for Thought Women’s Series, designed especially for forward thinking and leading women in our South Florida community, will host special guest speaker Dr. Leslie Baumann from the University of Miami on Friday, April 9. She will speak on Skin Aging - Its Treatment and Prevention

The luncheon begins at 11:30AM with a networking reception, followed by a light and innovative three-course lunch, including a glass of Robert Mondovi wine and Dr. Baumann’s insights from 1:00PM to 1:30PM

$34 per person, all-inclusive.

Sunday, April 11, 2004 - Easter
For Easter Sunday, April 11, Chef Allen is pulling out all the stops and offering a savory Easter menu Chef Allen-style. The four-course dinner includes a choice of appetizer including Butter Poached Shrimp with Parmesan Grits and Pistachio Ailliade and a choice of entrée including Cumin and Lime Roasted Leg of Lamb. The cost is

$75 per person; $35 per child plus tax and gratuity.

Wednesday, May 12, 2004 - Palate to Palette
7th Annual Passport Series

Please Join Chef Allen every month for an evening where culinary and visual arts are the menu. In the 7th year of the Passport series, Chef Allen introduces Palate to Palette where he will create a menu featuring food and wine inspired by the art of nationally and internationally known artists.

Recipe of the Month

  Chef Allen's Signature Mango Martini
At Chef Allen’s, July is Mango Madness month. We start by macerating hundreds of pounds of mangos in gallons of vodka, so we can put them up for the winter. We never want to let go of those bright, summer flavors. Use ripe mangos that have the sweet aroma of the tropics.

Ice Cubes
1 cup Mango Vodka (recipe follows)
2 twists of lime zest

Put the ice cubes in a shaker glass. Pour the vodka over the ice cubes and shake well. Strain into into 2 well-chilled Martini glasses. Garnish each drink with a lime twist.

Mango Vodka: Peel 3 ripe mangos, cut the flesh from the pit, and cut into large dice. Put the mangos in a clean 1-quart mason jar. Add 2 cups of Vodka and seal the jar. Let sit in a cool, dark place for 2-3 days before using. Store leftover vodka up to 5 days. Makes 2 cups.

Serves 2

Don't forget to adjust your clocks forward an hour on April 4th when Day light Savings time begins.
